- Comenzaremos realizando la crema de limón, para ello pondremos la mantequilla, jugo de limón y la primera cantidad de azúcar a fuego bajo, hasta que la mantequilla se derrita.
- Por otro lado abriremos los huevos con la segunda cantidad de azúcar, hasta que estén a punto de listón.
- Lo siguiente que haremos será atemperado los huevos, agregando un poco de la mezcla de maquillaje sin dejar de mover
- Agregaremos los huevos atemperado al resto del mantequilla y dejaremos que espese, sin dejar de mover; cuando ya esté espesa dejaremos que enfríe y reservamos.
- Para comenzar a realizar el bizcocho haremos un merengue francés, para ello empezaremos a batir las claras hasta que estén espumosas, para después agregar el azúcar en forma de lluvia, y seguiremos batiendo.
- Por otro lado abriremos las yemas con el azúcar glass y el extracto de vainilla, hasta estén a punto de listón
- Cuando las ganas estén listas agregaremos la harina marcada con el número 1 y abriremos un poco más, únicamente para mezclar
- Ahora mezclaremos de forma envolvente las yemas con el merengue, alternando con la harina 2
- Agregaremos la mezcla en una charola extendida y hornearemos a 160°C hasta que el bizcocho esté cocido
- Tendremos preparado un trapo húmedo con azúcar glass, para poder voltear el bizcocho, rellenarlo y enrollarlo
- Para de cortarlo puedes espolvorear un poco de azúcar glass por encima o bien cubrirlo con crema batida; deja fluir tu imaginación.
