- Pesar los ingredientes
- En la mesa de trabajo hacer un volcán los los ingredientes secos; (harina, sal, azúcar, levadura, leche en polvo y canela) en la parte del medio agregar las grasas; mantequilla y manteca vegetal
- Al igual el huevo y la yema y mezclar muy bien con las yemas de los dedos
- Mezclar muy bien todo, amasar durante 10-15 minutos hasta obtener una masa elástica
- Dejar fermentar en un lugar cálido o si lo prefieres hacer de noche lo puedes dejar fermentar toda la noche
- Recuerda engrasar el recipiente en donde lo vayas a dejar fermentar, al igual tarparlo para que no se seque
- Para la pasta de concha vamos a mezclar la harina, azúcar glass y la manteca vegetal
- Una vez que esté todo incorporado; agregar la vainilla, mezclar y refrigerar hasta el momento de utilizar para el relleno
- Una vez fermentada la masa, la vamos a ponchar
- En la mesa de trabajo agregar un poco de harina para evitar que se nos pegue la masa, hacer bolitas de 50 gr cada una
- Bolear y dejar fermentar durante 10 minutos
- Estirar la masa en forma de ovalo, cortar con un cuchillo o raspa líneas diagonales de medio cm de diferencia entre cada una
- Voltear la masa y dejar de lado; ahora con la pasta de conchas haremos esperas de 3 cm de diámetro y estiraremos en forma de cilindro tratando de hacerlos un poco las pequemos que la masa, apartarlos ligeramente y sobre la masa que estiramos la pondremos: este será nuestro relleno
- Ahora cerrar los extremos y dar la la vuelta nuevamente, dejar fermentar otros 20 minutos en la charola para después meter a hornear, para este libro encender el horno y precalentar a 180°c durante 15-20 minutos
- Meter a hornear durante 29 minutos o hasta que se vean dorados por la parte de arriba a 180°c
- Sacar del horno y dejar enfriar un poco, revolcar los gusanos en un plato con azúcar y canela
