  1. Primero preparamos nuestra mise en place para el bizcocho y separamos claras de yemas.
    Comenzamos suavizando la mantequilla para incorporar la mitad de la cantidad de azúcar hasta acremar bien.
  2. Derretimos el chocolate y ya que esté a temperatura ambiente agregamos a la mantequilla en forma de hilo, mezclamos bien e incorporamos las yemas una por una hasta obtener una mezcla espesa, firme y homogénea.
  3. Batimos las claras con la cantidad restante de azúcar hasta optener un merengue francés.
  4. Ya que tenemos nuestro merengue comenzamos a incorporarlo a la primer mezcla de manera envolvente intercalando con nuestros polvos (harina y polvo para hornear previamente cernidos), repetimos el proceso hasta terminar con el merengue y la harina.
    Ya que tenemos la mezcla la agrego a nuestro molde previamente enharinado.
    Hormeamos a 180°C durante 20 min aproximadamente
  5. Preparamos nuestro jarabe para bañar el bizcocho únicamente poniendo el agua a hervir y agregarle el azúcar.
    Cabe mencionar que la cantidad de azúcar depende del gusto personal. Y dejamos enfriar.
  6. Para nuestra crema de chocolate, comenzamos batiendo la crema y posteriormente agregamos el chocolate derretido (a temperatura ambiente) hasta obtener una mezcla firme. Reservamos.
  7. Ya que nuestro bizcocho esté listo, lo partimos en dos o tres partes (al gusto) y comenzamos poniendo la base y mojandola con el jarabe y posteriormente le ponemos la crema de chocolate.
  8. Encima ponemos otra rebanada de bizcocho y repetimos el proceso anterior hasta terminar. Posteriormente forramos el pastel con crema de chocolate y refrigeramos.
  9. A continuación preparamos el ganache este se logra poniendo a calentar la crema Lyncott y posteriormente agregamos el chocolate mezclamos hasta que se incorpore bien y retiramos del fuego.
    Dejamos enfriar tapando con algún plástico para evitar que se forme una costra.
  10. Ya que se haya enfriado el ganache, procedemos a terminar nuetsro pastelería, podemos acomodar a nuestro gusto, yo en mi caso cubrí la superficie con el ganache y deje algunas gotas a los costados y acomplete con unas deliciosas fresas y frambuesas espoloreadas en azúcar glass.
