- Teniendo nuestra masa, la agregaremos en una manga pastelera, enharinamos nuestra charola o colocamos papel estrella y comenzaremos a hacer profiteroles encima de ella. Los metemos a hornear a 150 o 180° por 15 a 20 min
- Mientras se hornean, haremos una crema pastelera de café, colocamos en una carerola la leche y el café a fuego bajo y en otro recipiente batimos las yemas con azúcar
y fécula de maíz. - Cuando le leche entre en punto de ebullición agregaremos unas cucharadas a nuestra mezcla de huevos y mezclamos, esto es solo para temperar, es decir que tengan la misma temperatura. posteriormente agregamos esa mezcla a toda la leche y comenzamos a batir, es importante no dejar de batir.
- Nuestra crema estará cuando tome una consistencia espesa y un poco líquida ya que al enfriar espesara más
- Cuando nuestros profiteroles se hayan horneado, colocaremos nuestra crema pastelera en una manga y comenzaremos a rellenar los profiteroles por la parte de abajo.
- El siguiente paso será armar el pastel y decorarlo con ayuda de caramelo, en una cacerola a fuego medio colocamos el azúcar y cuando comience a derretir bajamos el fuego, comenzaremos a pegar 1 a 1 en forma de pino ayudándonos del caramelo. Posteriormente dejamos enfriar un poco el caramelo y con ayuda de una cuchara comenzaremos a agregarlo por encima creando filamentos de azúcar decoramos a nuestro gusto y este seria el resultado final.
