  4. Vamos a batir hasta que el color de nuestras yemas tengo un color beish y hayan doblado su tamaño.
  5. Reservar nuestra mezcla.
  6. Para nuestro merengue francés vamos a utilizar nuestras claras y añadiremos poco a poco nuestra azúcar.
    Hasta que doblen su tamaño y nuestra mezcla esté esponjosita.
  7. Batir hasta tener una consistencia cremosa y esponjosa.
  8. Una vez listas nuestras dos mezclas las vamos a integrar poco a poco.
  9. Una vez lista nuestra mezcla tenemos que reservar.
  10. Alistamos nuestra charola y añadimos la mezcla. Hornearemos a 150° por 25-30 minutos dependiendo del horno que tengas.
  11. Para nuestro relleno haremos una crema de limón con los siguientes ingredientes.
  12. Pondremos a derretir nuestra mantequilla, después le añadimos el jugo de limón, la ralladura y una parte de azúcar.
  13. En un traste aparte batir los huevos con el azúcar a punto de listón.
  14. Una vez que tenemos nuestra mezcla de huevos y la mantequilla derretida con limón en la estufa, vamos a templar nuestra mezcla.
  15. Volver a la estufa y seguir mezclando hasta que se forme una mezcla espesa.
  16. Extender nuestro pan en un trapo húmedo y limpio.
    Agregar jarabe de limón y humedecer el pan.
    Añadir el relleno y expandir en nuestro pan, agregar trozos de nueces.
  17. Empezar a enrollar de manera delicada el pan.
  18. Decorar de la manera que deseen, con crema de batir o cualquier otro tipo de betún.
    En mi caso yo lo decore con un betún de queso crema y fresas frescas.
