- Primero haremos la masa choux, preparamos nuestros ingredientes, ponemos el agua en un coludo, agregamos la mantequilla y esperamos a que empiece a hervir.
- Ya que haya empezado a hervir, agregamos la harina (previamente cernida) de golpe y comenzamos a mezclar, al principio estará un poco líquida pero poco a poco irá espezandose y a tomar forma en sí de masa con un color un poco rubio. Retiramos del fuego y dejamos enfriar por entre 15 y 20 minutos.

Comenzamos a mezclar haciendo formas de 8 y esperamos hasta que nuestra mezcla se vea espesa y retiramos para dejar enfriar. - Ya que estén nuestros profiteroles, les hacemos una pequeña incisión en la parte de abajo y con ayuda de una manga los rellenamos de crema pastelera.
- El caramelo lo vamos a realizar únicamente colocando todos los ingredientes en un coludo y dejamos hervir a fuego bajo hasta que se consuma casi un 70% y adquiera un color dorado.
- Con el caramelo vamos a ir pegando cada profiterol y con ayuda de un cono vamos a ir dándole forma de pico.
